Salmon Spread

Preheat oven to 350 degrees

2 lbs salmon fillet
salt to taste
pepper to taste
dill to taste
2 tbsp lemon juice
2 tbsp olive oil
aluminum foil (twice the width of the salmon fillet and about 2 inches longer than the fillet

Spread Mixture:

2-3 cups mayonaise
1 cup diced cellery
1 small onion diced
1 cup green olives diced
 

Lay foil flat on long baking dish/pan, brush with olive oil. Place salmon skin side down. Sprinkle with salt, pepper and dill to taste. sprinkle lemon juice over fillet.

Wrap salmon fillet well sealing all edges and bake in preheated oven at 350 degrees for 30 minutes.

Remove from oven and let stand for  about 20 minutes.

Remove skin from salmon. Take the salmon and crumble it into a large bowl. Add remaining ingredients and mix well.

Serve with crackers or as a sandwich. This is sooooooo yummy!! And works well with any left over baked salmon also.
